This is an old weight watchers recipe that Iadore. With minimal measuring and mixing, you can actually make your own minute mug cake mix that only needs water and a minute in the microwave to cook into a fluffy, single serving of cake!
My daughter is a huge fan of cupcakes– I am not. I mean, I post my fair share of them here, because really Ido like cupcakes. But honestly, I think they're a hassle to make. And then you have like 2 dozen leftovers. So we make this cake a lot in place of cupcakes whenever my daughter has a craving (which is often)!
She loves that she gets to decorate it, and I love that there is only one 🙂
Also nice? It's pretty low in calories (about 100 calories for the cake, about 200 if you add store-bought frosting like I do).
And, on a side note, it can also be made dairy free if you use Duncan Hines cake mix and Pillsbury frosting! Who'da thunk?
You'll need two simple ingredients to make your mix: 1 box of angel food cake mix and one box of any other flavor cake mix. Simply mix those two together in a big bowl.
And then, it's 3-2-1 time!
Mix three tablespoons of your mix with two tablespoons of water, and microwave for one minute. Voila! Cake 🙂
I've been making them in little 1-cup pyrex bowls, but you can make them in any small microwave-safe bowl. You need at least a cup's worth of room to allow for expanding.
Add frosting or whipped cream if you want, and then dig in with a spoon and enjoy!
Ingredients
- 1 Angel Food Cake mix (about 15 ounces)
- 1 other cake mix (about 15 ounces)
Optional:
- store-bought frosting, sprinkles, other toppings
Instructions
Mix together the cake mixes. Store the mix in an airtight container.
To make the cake:
Mix together 3 tablespoons of mix with 2 tablespoons of water. Microwave* in a small, microwave safe bowl for 1 minute. Serve immediately.
